more vegetarian food....

my 3 cheese and mushroom pie with spinach and parsley.

you will need:

500g of mushrooms, sliced.
soy sauce
500ml of stout
blue cheese
fetta cheese
parmesan cheese
1 leek or onion
parsley
chopped spinach


first take your mushrooms and marinate them in the soy sauce and stout for several hours.

after this remove the mushrooms from the marinade and saute them in a saucepan using butter or ghee until they are cooked. 

take your leek or onion and chop it finely and saute in ghee until they are cooked and add them to the mushrooms, which you have kept simmering on a low heat with some of your marinade.

next take a baking dish and line it with shortcrust pastry. 

add a layer of your mushrooms to the bottom of the dish, and then on top of this add a layer of blue cheese and spinach and parsley.

then add another layer of mushrooms, then add feta, spinach and parsley.

finally add another layer of mushrooms, followed by a layer of parmesan, spinach and parsley.

add a lid to your pie uing eith shortcrust or flaky puff pastry, remembering of course to brush it with butter so it goes golden brown.

should cook through in around a half hour in an oven set at around 200 centigrade.

then, grab a slice and enjoy, mmmmmm.
